May Mojito
There are certain drinks that just transport me to vacation-mode with one sip- this drink is on that list. Mojitos always feel like a tropical treat, but come without the sugar-induced hangover of a daiquiri or margarita. Plus, no blender to clean. I love how three simple ingredients come together to make something so simple and refreshing.
Makes 2.
· 10 fresh mint leaves
· 4 ounces light rum
· 2 ounces simple syrup
· 2 limes
· 4 ounces club soda
1. In a cocktail shaker, muddle the mint and simple syrup, reserving a few sprigs for garnish.
2. Add the rum, juice of two limes and a cup of ice to the cocktail shaker. Shake well.
3. Fill two tall glasses with ice. Pour mojito into the glasses, evenly distributing the mint leaves. Top with club soda and stir.
4. Garnish with mint leaves. Serve chilled.
